Beef Pot Roast

Ingredients:

  • 2-3 pound beef roast (such as chuck roast or rump roast)
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. Heat the oil in a large, oven-safe pot or Dutch oven over medium-high heat.
  3. Season the beef roast with salt and pepper on all sides.
  4. Place the roast in the pot and sear on all sides until it is browned, about 2-3 minutes per side.
  5. Remove the roast from the pot and set aside.
  6. In the same pot, add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  7. Stir in the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, and bay leaf.
  8. Return the roast to the pot and bring the mixture to a simmer.
  9. Cover the pot with a lid and transfer it to the preheated oven.
  10. Cook the roast for 3-4 hours, or until it is tender and falls apart easily.
  11. When the roast is done, remove it from the pot and set it aside to rest.
  12. Skim any excess fat from the surface of the cooking liquid.
  13. To make the gravy, mix together 2 tablespoons of cornstarch with 1/4 cup of cold water in a small bowl.
  14. Stir the cornstarch mixture into the cooking liquid and bring the pot to a simmer.
  15. Cook the gravy for 5-10 minutes, or until it thickens to your desired consistency.
  16. Slice the roast and serve it with the gravy.
