Homemade Tortillas and Cheese Quesadillas

Ingredients:

Ingredients for Tortillas:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp olive oil
  • 3/4 cup warm water

Instructions:

  1. In a large mixing bowl, combine the flour, salt, and baking powder. Stir to combine.
  2. Add the olive oil and warm water to the dry ingredients. Mix until a dough forms.
  3. Knead the dough for a few minutes, until it becomes smooth and elastic.
  4. Divide the dough into 8 equal pieces.
  5. Roll each piece of dough into a ball.
  6. On a lightly floured surface, use a rolling pin to roll each ball of dough into a thin circle.
  7. Heat a large, dry skillet over medium heat. Place a tortilla in the skillet and cook for about 1 minute, or until bubbles start to form on the surface. Flip the tortilla and cook for an additional minute. Repeat with the remaining tortillas.

To make a cheese quesadilla, you will need the following ingredients:

  • 2 tortillas
  • 1 cup grated cheese (such as cheddar or Monterey Jack)
  • Optional fillings: diced cooked chicken, diced bell peppers, diced onions, diced tomatoes, etc.

Instructions:

  1. Preheat a large skillet over medium heat.
  2. Place one tortilla in the skillet. Sprinkle half of the grated cheese over the tortilla, leaving a small border around the edge. Add any optional fillings on top of the cheese.
  3. Place the second tortilla on top of the fillings and press down lightly.
  4. Cook the quesadilla for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese is melted.
  5. Carefully flip the quesadilla and cook for an additional 2-3 minutes, or until the second side is golden brown.
  6. Cut the quesadilla into wedges and serve immediately.
