Chicken and Bean Burrito

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 small bell pepper, diced
  • 1 cup cooked and shredded chicken
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup salsa
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 4 large flour tortillas
  • 1 cup shredded cheese
  • Chopped fresh cilantro, for garnish (optional)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until they are tender, about 5 minutes.
  2. Add the chicken, beans, salsa, cumin, and chili powder to the skillet and stir to combine. Cook for an additional 5 minutes, or until the chicken is heated through and the mixture is hot.
  3. Place one of the flour tortillas on a plate and spoon about 1/4 of the chicken and bean mixture onto the center of the tortilla. Sprinkle with a quarter of the shredded cheese.
  4. Fold the sides of the tortilla over the filling, then roll the tortilla tightly to form a burrito. Repeat with the remaining tortillas and filling.
  5. Heat a large skillet or griddle over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes, or until the bottom is golden brown. Carefully flip the burritos and cook for an additional 2-3 minutes, or until the other side is golden brown.
