Chicken Noodle Soup

This is a recipe for a classic chicken noodle soup that is both simple and easy to make:

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups water
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces egg noodles
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook until the vegetables are tender, about 5 minutes.
  2. Add the chicken broth and water to the pot and bring to a boil. Add the chicken breasts and reduce the heat to a simmer. Cook for 10-15 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot and set aside to cool. When it is cool enough to handle, shred the chicken into small pieces and set aside.
  4. Bring the soup back to a boil and add the egg noodles. Cook for 8-10 minutes, or until the noodles are tender.
  5. Add the shredded chicken back to the pot and season with salt and pepper to taste. Garnish with chopped parsley, if desired.
